I made an alcoholic beverage (GASP)!
For those of you who may not know me well, I'll fill you in. I don't drink. Not casually, not frequently, not ever. It's not that I think it's wrong or bad, and it's not because I just have a really strong appreciation for the law... I just don't drink.
There are a slew of reasons I could explain, but the simple point is that I've never felt that alcohol would add to my life, and I've never had a desire to drink. I've done it, it was fine, some alcohol tastes quite good, and that's all nice and dandy. It's just not really something I feel compelled to do, and so I don't drink.
So whatever could have come over me that drove me to make margaritas? Well, for starters, Cinco de Mayo. If there's a day of the year to drink, Cinco de Mayo is probably it.
But if we're being honest... it was mostly just an excuse to make a smoothie and have it with dinner. We all have our reasons.
But whether you're a hard time binge drinker (shout-out to those of you with WAY higher tolerance than I), or whether you're like me and only like alcohol when it's an excuse to make something delicious, this recipe is superb.
I mean honestly, it has tequila AND mango. I don't even feel the need to explain this one.
Sparknotes version: It's delicious. Don't ask questions. You own a blender. You know what to do.
Mango Lime Margarita
Prep time: 5 minutes
1.5 oz triple sec
1 cup cubed mango (frozen works)
1 cup ice
1 lime, juiced and zested
1 lemon, juiced
1 tbsp sugar (or agave nectar, stevia, or your sweetener of choice)
1. Zest 1 lime and set zest aside
2. Combine tequila, triple sec, mango, lime juice, lemon juice, ice and sugar in a blender
3. Blend (obviously...)
4. Add more sugar or ice accordingly. NOTE: If you use frozen mango you will need less ice. If mixture is too thick, add cold water.
Sprinkle with lime zest and enjoy!
